Basically, you cut your zucchini in circular pieces and place them down on a deep cookie sheet. Top each piece with a sliced tomatoe, fresh veggies of your choice (peppers, onions, etc), you can add bacon if you want meat, or pepperoni {you can leave it out though C ;)}, then top each circle with spices and cheese. Cook for about 15 minutes {I think, but it's been awhile since we had big enough zucchinis to do this}, until the pieces are tender. Each bite is tasty!<BR/><BR/>Every pregnancy made me vegetarian, because the minute I touched raw meat, I was convinced it was never cooked...Hubby used to test the meat, because I could never be convinced it wasn't raw, even after sauteeing it for 20 minutes...lol<BR/><BR/>I cooked many roasts {less meat-touching} and ate the steamed veggies and lots of legumes. :)<BR/><BR/>I still dont' enjoy meat much {after 10 years of pregnancies :)}, but I do cook it for the kids. <BR/><BR/>As for the Chocolate comment, well, mmmmm. Chocolate has its own food group. :) You do realize that Chocolate Works carries sugar-free chocolates, if you are worried about your sugar intake? :)<BR/><BR/>And the Chocolate-opoly game is very fun. :) I might be convinced to invite you to our yearly chocolate party {Belgian chocolate in a fountain, fruits, junk food and games!}. There was this lady being covered with shaved chocolate all over her body and having a chocolate facial (that sounded <I>really</I> bad, didn't it? LOL!). All I kept thinking is "Man! What a waste of chocolate! He's been checking out the venues, etc.<BR/><BR/>The same thing happened for our 10 year reunion. Everyone wanted a reunion, but no one really committed to it and it never happened.
