Liquid Gold


My darling husband thought it would be neat to give our student from South Korea a truly "Canadian" experience. Hubby took it upon himself to tap some of our maple trees and make maple syrup for the first time!!! Yippeeeeeeee! It was quite the exciting process and I didn't realize just how labour intensive the process actually is! I think he said it's something like 40 L of sap collected to make 1 L of maple syrup??? I think the ratio is 40:1, but I'm not sure. We sampled the syrup and it is sooooooooooo good!

I can't wait to have pancakes for breakfast tomorrow!!! LOL!
Nuthin' says I love you better than a jar of sweet, golden (okay, amber) homemade maple syrup!!!

Save me some of that maple syrup. We;ll be coming up this summer girly girl!

Thanks! I think it's pretty neat :) When I was a kid, growing up in Quebec, we used to go to the "cabane a sucre" (sugar shack) every year with our school. We'd learn how to make maple syrup and then have a big Quebecois breakfast (eggs, pancakes, toast, bacon, sausages, etc) and put maple syrup all over everything! Another thing we used to do was to pour syrup all over fresh (clean!) snow and take popcicle sticks and wrap the 'taffy' on the sticks and eat it. Whenever I think of my childhood, the sugar shack trips always come to mind :)

100% Pure Canadian Maple Syrup, EH? Youshould market and sell your syrup. The Japanese just love that stuff here. Some of the Canadian teachers here always get their families to send over boxes of maple syrup, maple cookies and ice wine!

We aren't doing anything large scale. We just made some for our consumption and for friends and family. It may be something to consider way, way, way down the road though. Right now it's just for ourselves. Oh, and I used to get my mom to send me care packages too! She used to send maple cookies because all my co-workers and students loved the stuff! Too sweet for me, but they enjoyed it. BTW, I didn't think you were allowed to send alcohol in a care package. Are you sure their parents shipped over ice wine too?

I just made pancakes for the kiddies this morning and was thinking about your maple syrup. The Aunt Jemima was just not cutting it after I read your post! How scrumptious!!
