Just a few musings from the farm...


Believe it or not, this is Little One's absolute favourite salad.
INGREDIENTS:
Whole wheat pasta, 1 pkg.
1/2 cucumber
2 handfuls of grape tomatoes
1/2 red onion
chickpeas, 1 can
feta cheese, just a few sprinkles
1 handful of black olives
a few drizzles of balsamic vinegar and olive oil

1. Cook whole wheat pasta as directed on box.
2. Wash cucumber and grape tomatoes. Dice cucumber.
3. Finely chop red onion.
4. Drain and rinse chickpeas (if using canned chickpeas).
5. Drain black olives.
6. In a large bowl, add balsamic vinegar and olive oil. Add cucumber, tomatoes, red onion, chickpeas, red onion, and black olives.
7. Drain cooked pasta and add to the bowl with the rest of the ingredients.
8. Toss salad, making sure the balsamic vinegar and olive oil coats all the ingredients.
9. Sprinkle feta cheese on top.
10. Dig in! Yum!

That's it. That's all.

I think it's quite funny that a 15 month old just loves chickpeas and black olives!

This recipe makes a HUGE salad serving, so it's great to take to potlucks or keep individual servings of leftovers for lunches and supper the next day. Note that I don't ever use exact measurements. Use ingredients to match your taste and your liking. I actually use a whole cucumber and a whole red onion sometimes. The whole red onion is a bit potent for some people. It really depends on what you like. You can never have too many black olives though! ;)

me too! me too! that looks so yummy and easy that even i can make it! {{{{{{{lol}}}}}}}}}} you surprised i'm willing to try to make something healthy, chris? quite the cange from my homemade frmo a box! i was so surprised whne you told me that making cake from a box was not considered baking a cake! heheheh

7. Feta cheese

9. Olive oil

A few more ingredients than your amazing 3 ingredient tomato sauce!!!

I guarantee that this will be a dish you'll be able to make for potlucks, parties and get-togethers...or even just for you and your boyfriend!

HAHA! Yeah, I'm glad you have a great sense of humour and that we're good enough friends for that comment to not offend you! You know I didn't mean it in a mean way. You know what I mean! Boxed cakes and Pillsbury dough cookies just isn't real baking :) Oh, and you were so funny when your husband said that you "baked" your son's birthday cake. I love you guys! It was good cake though! Mmmmmmm.... I love this salad, but I use greek dressing with feta and oregano and I omit the red onion and chick peas. Either way, it is a great salad and my kids like it too!! What a bonus!

I HEART FETA!

If no kids were eating it I'd use another olive type. I'm a big olive fan, but I enjoy the briny aspect of non-canned-black olives.

Mmmmmmmm! Ridiculously easy recipe. Here's something funny...When I was younger, I HATED olives and I hated feta cheese! Now, I can't get enough!! LOL!
