Ode to Summer...
With the sweltering heat of summer, what better way to treat yourself than with a refreshing, delicious MANGO SALAD!!?!?
My mom's original recipe calls for watercress, but since watercress is difficult to find on the island, we now use spinach.
You will need:
5 cups spinach
2 unripe mangoes (still green and hard- you want a tart taste to it and if it's too ripe, it's too sweet and can be mushy)
Wash and cut spinach (if you use baby spinach, then no need to cut); peel and grate mangoes (I use a cheese grater to grate mine). Put both ingredients in a salad bowl.
For your dressing:
Mix together 1/2 c. balsamic vinegar, 1/2 c. olive oil, 1 tbsp. honey, 1 or 2 tbsp. minced garlic (depending on your taste. I LOVE garlic, so I go a bit heavy on the stuff), salt and pepper to taste.
Pour dressing on salad and lightly toss. This is one of my favorite recipes. Soooo nice on a hot summer day!!
