Sweet-and-Sour Pineapple Chicken


Our local grocery store had pineapple on sale. 3 for $5. I couldn't resist. I know I've been telling you all that Hubby and I like to buy locally. Most of our produce comes from our gardens and our meat comes from our farm. Well, our beef comes from our farm. We buy our chicken, and pork. Most of the fish we eat is caught locally (by my Dad, our friends, my uncle and my cousin). I felt awful knowing that the pineapples were trucked in from some warm country just so we could satisfy our taste buds.

You don't understand though. I have been craving (even dreaming about) pineapple! The sweet, tangy, slightly sour fruit, dripping with refreshing juices!! Ahhhhh!

Little One and I munched on some pineapple wedges today. I also made this for supper:

I didn't have green and red pepper on hand, so those two ingredients were missing from the dish. I was going to serve the dish with brown rice and a spinach-red onion salad with dried cranberries, roasted almonds, and poppy seed dressing.
I got lazy and ended up making couscous instead of rice. Couscous has got to be the easiest thing to make...ever! Boil water, stir in couscous, remove from heat, cover, and let stand for 5 minutes. Who could mess that up? Seriously, couscous is a no brainer! It's so easy and fast to make...and it's so yummy!

Apparently, I'm the only one in our household who feels that way though. Both Hubby and Little One haven't acquired a taste for couscous. I blame it on their uncultured palates. Just kidding. Couscous does have a texture that takes some getting used to for some people. It's all about the texture.


Little One LOVED the Sweet-and-Sour Pineapple Chicken!!! She devoured the chicken, but spat out the couscous! She then proceeded to look at me with a strange expression on her face...and began to play with her couscous.

wow looks delish!! i still remember when Kathy came to visit you and stayed with us and made yummy pineapple chicken!!
there are so many different grains you could give LO to try. you may find one she really likes !

hi c- what a delicious recipe (pineapple chicken)! and yes, couscous is super easy to make. i love it. you have to be really lame to mess up couscous. hopefully your daughter will grow into liking it one day. has she tried brown rice?

No worries! I know the feeling! To be honest, I don't get to post every day, so sometimes if I get "inspired", I post date my posts! LOL! I stock pile them and save them for future dates when I need a post!

Sure, I'll come and cook for you! It'll only take me 6 or so hours to get to you! LOL!

Yes! I remember that dish Kathy cooked! She made it again last summer when she stayed at our house. Hubby really liked it. It's different from this recipe, but soooo good too!

Funny thing is that Little One takes a while to get used to different textures. I'm pretty sure it's the texture of couscous that she's not too keen about. I remember when we first started giving her rice, she CRIED!!! It was so weird. She just hated the texture. After about two weeks of trying to give her rice, she finally decided it wasn't so bad. BUT...she only wanted MUSHY rice! She didn't like it firm.

She LOVES oatmeal. I eat a bowl of oatmeal for breakfast and she eats half my bowl!

I sometimes switch things up and I've given her Quinoa. Like couscous, I think she just doesn't like the texture.

Funny how it's all about the textures with babies. I'm sure if we keep trying her on couscous and Quinoa, she'll eventually like them. At least, I hope so! LOL!

She LOVES whole wheat and rice pastas. She loves food in general. Just not tiny grainy kinds of food! LOL!

That is exactly why couscous is my go-to side dish if I'm feeling lazy to cook! LOL! Super fast and easy to make. It's so versatile too!

Yeah, Little One has had brown rice. She is starting to not play with it so much when she eats it. With rice, couscous, and Quinoa, she tends to spit it out, play with it, and then squish it in her hands...and finally, she ends up wiping her tray with it. She just seems to find the texture a bit weird.

She'll eat the rice more now. Still have to work on the quinoa and couscous though.

I have to remember not to laugh when she wipes her tray with everything. The look on her face is classic though! Her eyes go big, she instantly spits out the grains, and looks at me like I'm crazy for giving her something so weird to eat. I swear, the couscous came out of her mouth almost as fast as it went in! It was instant, automatic, and just the funniest thing ever! I kind of wish I got it on video because it was so funny!

yumm.. it looks delish! Seriously, though with the spinach salad? You are going to singlehandedly support the spinach growers of the world! LOL! You should try some mandarins in your spinach salad! I bet L-O would love them too!

How funny, I made sweet and sour pineapple chicken for dinner last night!
My recipe is similar, but no ginger, sherry or ketchup. Cider vinegar is used instead of rice vinegar, and pineapple juice instead of chicken broth.

HA! I know! I've eaten spinach salad (different variations of spinach salad, mind you!) EVERY day for the past few days. Can't get enough! Maybe my body is craving some element of the spinach? Who knows why?! Poor Hubby's probably sick of spinach salad! LOL!

Totally going to try the mandarin in the salad next!

I made the pineapple chicken again tonight, but this time slightly different. I didn't use the recipe that I posted here. I used one sort of like the one you described.

For some reason, I can't get enough of pineapple AND spinach this week! LOL! Weird!

P.S. Not pineapple and spinach together. The pineapple was with the chicken and the spinach in a salad! Good thing Hubby isn't a fussy eater! He enjoyed having two nights of pineapple chicken! The week of spinach salad though...Not so sure! LOL!

Mmmm. That chicken looks GOOD. I think I'm going to have to make some. Maya hates chinese food, so the question becomes...do I make it when she's not here, or do I just not tell her it's Chinese food? ;)
