A Super Easy, Super Quick, Super Heart Healthy Dish for Supper!


My lovely friend, Jeanna was asking for tomato recipes. Why the tomato recipes, you ask? Well, over at Evelyn's Corner, Jeanna and her Mom are participating in the Red Gold contest! They tried out my Rich Pasta with Melting Brie recipe. If you ask me, anything with melted Brie is a winner! Gotta luuuuuv Brie!!

Since Jeanna had me thinking of all the tomato recipes I had, I thought I'd post this one. It's a fresh, healthy, light main dish that is so easy to make!

Let me be the first to tell you, that I am not really a fish person. I like tuna and salmon, but that's about it. I just don't like "fishy" tasting or "fishy" smelling fish. There's something about fish that sends of that instant gag reflex in me. However, I've come up with a bunch of fish recipes that I do love. We are making a conscious effort in our household to eat more fish. Fish is good for you, blah, blah, blah.

Hubby (being a meat and potatoes farm boy) isn't much of a fish person either. He does love the fish dishes his dear wife makes for supper though. At least, that's what he tells me! Ha!

If we had our choice, we'd opt for the panko breaded fish and most likely pan-fried. Again, I'd like to steer clear of fried food and mostly bake or grill our food. Here's what I came up with one day while trying to think of how to cook the fish some of our friends brought over for us after a fishing excursion. They brought salmon that they caught, but this recipe works really well with sole!


Chrissy's Heart Healthy Tomato-Garlic-Basil Sole Recipe
4-6 sole fillets (not too thick)
2 tbsp olive oil
1 tbsp minced garlic, and some fresh basil, chopped
1c diced tomatoes (I use fresh, but you can certainly use Red Gold)
a few dashes of Herbamare (sea salt/spices)

Place fillets in a baking dish. Mix all other ingredients together in a bowl or measuring cup. Pour or spoon mixture over fillets. Make sure to distribute mixture evenly. Bake in a 450 degree oven for 15 min or so.

While you're doing this, you can throw some rice in a rice cooker and make a salad.  
Dinner made in less than 30 min. Crazy or what??? Perfect recipe for busy people!

You always make it sound so easy, C. Wish I could have videod what happened when I was making Bloody Marys earlier. A real "I Love Lucy" moment.
