A veggie paradise...


I was looking at some old photos of myself in my 'singlehood'. Pics of me in college with my wormy group --long story...I belonged to a enviro collective in college where we tried to save the world from destruction and peacefully sorted worms for our vermicomposting. Yeah, there's a lot about this crazy girl that you don't know ;) There were pics of me visiting my friend Kelly in Barbados, me working at various summer camps for kids (ask Kelly...I think one of them was actually called HELL!!!), me teaching and living in Japan, me touring Singapore (eating Singapore noodles and slinging back a Singapore sling), me touring Bali....

Bali has got to be one of my favorite places in the world. Keep in mind, I went there before all the bombings!! I was at the Sari Club weeks before it blew up!! Bali is filled with lush flora and is rich in history. The temples are breathtaking and the rice fields are stunning.

Bali is also a vegetarian's paradise! A full meal cost me at the time, less than $4 US! Fresh fruit, amazing fruit beverages, spicy noodle or rice dishes...all less than 4 bucks! We also stayed at a wonderful hotel (absolutely gorgeous!!) for about $12 US/night! How ridiculous is THAT???

Anyway, my Bali pics brought back memories of my veggie days. I try not to eat too much meat, (I still sometimes feel ill if I think about what I'm eating) but sadly, I am no longer vegetarian. I'm not vegan and I'm not lacto-ovo, though I wish I could be once again. I was vegan for only a few months, but realized I loved dairy way too much. Lacto-ovo suited me just fine. I was mortified when I discovered that the veggie patties (like Jamaican patties without the meat) were not exactly vegetarian...they were made with beef suet!! Anyway, I had to slowly incorporate meat back into my diet because I was getting very sick after many years of vegetarianism. I know it's sad and it goes against all of my moral beliefs. It's still hard for me to do...but I was on weekly trips to the docs for B12 shots and was anemic and my hair was even falling out in clump-fulls. Oh, and how ironic is it that my husband-to-be operates a cattle farm??? I have a hard time with it because these creatures are so beautiful and I can't help get attached to them.

Well, I wanted to share two of my fave veggie cookbooks. They're both by Mollie Katzen. My fave (and it was my vegetarian bible in college) is The Moosewood Vegetarian Cookbook and the other is The Enchanted Broccoli Forest.

Hope you enjoy them as much as I do! There are loads of yummy and moderately easy to prepare meals in both books.

I have the MVC and they have some really good recipes . everything from soups, main dishes, desserts. Have you made the vegetarian samosas? They're to die for!

Yes, I've made the samosas before. They're really good. My fave recipe in the Moosewood vegetarian Cookbook is the butternut squash soup. It's very nice- just a hint of curry. Mmmmmmmm. Oh and the banana bread recipe's good too.

oh chris...i remember that yummy soup so well!! you used to make it back when we were roomies!! i actually meant to ask you for it over the winter as I started making soups all the time and freezing it in individual containers to take to work with me for lunch...

What in the world are you doing up there?! JK ;) Sounds like you should be out in some far flung exotic land saving lives and teaching children! You are a very interesting person, C. J is a VERY lucky guy!

LOL! Actually, Ms Mamma, I DID teach children overseas for 2 years! I was stationed in rural Japan, just outside Hiroshima!!

I wanted to go to Africa at one point. I applied for a project to help build irrigation dams and teach kids there, but I had to raise the funds to get there and everything...it didn't work out at the time. Plus, my parents and my grandmother were way too worried about me going there, so I never ended up going.
