999


That's what my NeoCounter reads! 999 visitors from 44 countries. If this is correct, and I have visitors from Jordan, Ireland, Slovakia, Croatia, India, Singapore, Malaysia, and elsewhere around the globe, then how come no one is leaving me a message to let me know who they are? I'm curious to find out who has stumbled upon my little space in cyberland.

Feeling kind of blah today. Don't worry. I guess it's just "one of those days". Thank goodness I don't get many of these kinds of days! Sometimes it's just so exhausting to be so happy all the time. Does that make sense? Today I just feel so tired of "good". I'm tired of everything healthy all the time. I'm tired of being a good and kind person. I'm tired of always worrying about doing things for other people. I'm tired of even caring about doing things for other people. These are the days when you don't want to do any kind of work whatsoever. They're the days when you want to sleep in and not do anything productive at all. These are the days when all you want is carbs, carbs, carbs! All you want is chips (which you don't have in the house because you've vowed not to have them in the house unless you have company!) or disgustingly greasy and fattening fast food (which you also don't have access to because you live on an island that doesn't have any fast food franchises. Thank goodness!). Anything high in calories and fat would be something I'd have to make...from scratch. I'm so unmotivated at the moment, that I can't even bake, cook or make anything bad for us. Sometimes I wonder if my idea of making everything homemade and from scratch is a good idea! Heck, I could have had some frozen stuff popped into the oven and ready in no time! Well, maybe it's a good thing that we don't do things that way in this household.

I'll leave you with a yummy treat I tried at my MIL's not too long ago. I scoured the internet for the recipe and lo' and behold, I found it! I was told that the dessert was called Tiger Tails. After Google searching Tiger Tails, I kept coming up with recipes for this alcoholic beverage. I should have known, since I've heard my kid brother mention the drink before. BabyBro moonlights as a bartender at one of the establishments in the university town where he currently resides. Anyway, I finally found the recipe for the dessert and it's called Tiger Bars.

Hopefully tomorrow I'll be out of this funky mood.

CHIPITS Tiger Bars
Recipe from the Hershey CHIPITS site

Yield: 24 bars

Ingredients
  • 1/4 cup (50 mL) butter or margarine
  • 1/4 cup (50 mL) firmly packed brown sugar
  • 1/4 cup (50 mL) golden corn syrup
  • 1/2 cup (125 mL) CHIPITS Butterscotch Baking Chips
  • 2 cups (500 mL) crisp rice cereal
  • 1 cup (250 mL) CHIPITS Semi-Sweet Chocolate or Premium Dark Chips
  • 1/4 cup (50 mL) CHIPITS Butterscotch Chips
  • 1 teaspoon (5mL) oil


Directions

  1. Bring butter (or margarine), firmly packed brown sugar and corn syrup to a boil in large saucepan over medium heat.

  2. Remove and stir in 1/2 cup (125 mL) CHIPITS Butterscotch Chips; stir until melted. Stir in crisp rice cereal.

  3. Press into greased 8-inch (23 cm) square pan.

  4. Melt CHIPITS Semi-Sweet Chocolate Chips. Spread evenly over surface of bars.

  5. Melt 1/4 cup (50 mL) Butterscotch Chips with oil over hot water. Drizzle in lines over surface of bars. Chill. Cut into bars.

In fact, Cherry (at Cherry Extract) sent over some Xmas delights that are, well, delightful. The best of the bunch is a ginger cookie. :-)

Ohhh! Poopy day!

I hope it passes quickly for you, and that craving of carbs and junk passes too. What great anti-junk motivation to make everything from scratch! You have to REALLY want it, if you're going to go through the trouble of making it. Although I'm looking at some potatoes my honey harvested last month and thinking how good those might be right now fried or steamed with some butter.

I'm home sick and even though I don't really want to eat anything, the only thing I kinda want to eat is junk and carbs too (or spicy food oddly). Hubby is out getting me some junk, oj, meds and kleenex right now, even though my parents brought over a fresh pot of chicken soup. (sorry Papa!)

I should send you some cookies ;-)

I did indulge in two of those Tiger Bars at our New Year's Day vegetarian pot luck! Thank goodness the squares were tiny! Cut any larger, would have been deadly! LOL!

Seriously! I have been craving potatoes too! Baked, scalloped, mashed, French Fried (lol), roasted...I don't know why the sudden craving for potatoes!

The good news is that I didn't end up making anything junky. We ended up snacking on carrot sticks (which were remarkably refreshing).

So true! You know, a friend of mine once said that a bit of junk once in a while isn't horrible for you. Sometimes your body craves some element of what that food has. Ex: If you're craving chips, perhaps your body is telling you it needs salt. Of course, there are better ways of giving your body what it needs. I think that was just an example she was trying to give. I don't think she was saying to eat chips because you need salt! LOL!
